Double Strawberry Dessert
Surprisingly, Strawberry + Jell-O + Sour Cream wasn’t that bad!
2 packages Jell-O Strawberry Gelatin
1/4 cup jelly, any red flavor
Dash of salt
3 cups boiling water
1/2 cup sour cream
1 package (10oz) Birds Eye Quick Thaw Strawberries
Dissolve gelatin, jelly, and salt in boiling water. Measure 1/2 cup of the mixture; blend into sour cream; chill. Add frozen strawberries to the remaining gelatin mixture and stir with a fork until berries are separated and thawed. Pour into a 4- or 5- cup serving bowl. Chill until firm- at least 3 hours. Spoon firm gelatin into individual dessert dishes. Beat sour cream mixture until smooth; spoon over dessert. makes about 4 cups or 8 servings. Note: Recipe may also be chilled ina 4- or 5- cup mold; chill until firm – about 4 hours. Unmold. Serve with sour cream topping.
Okay so the idea of sour cream mixed into this was pretty daunting. And my favorite – frozen fruit – was back. I’m still trying to get the hang of exact timing of “until firm” and all the other levels of chilling mean. There’s a help section at the back of the book that isn’t very helpful. I wish i had some cool glasses to put this in because the picture just looks like pepto bismol, but it’s prettier than it looks and tastier than I thought! Four Jell-O’s awarded.
