Black Raspberry Ice Cream Dessert
Although this doesn’t look very “black raspberry”, it came out alright, alright, alright.
1 package Jell-O Black Raspberry Gelatin
1 cup boiling water
3/4 cup cold water*
1/4 cup sherry wine*
1 pint vanilla ice cream
* or increase cold water to 1 cup and omit the wine.
Dissolve gelatin in boiling water. add cold water and wine. Add ice cream, by spoonfuls, stirring until melted. Chill until slightly thickened; then stir, and spoon into dessert dishes. Chill – about 1 hour. Makes 3 1/2 cups or 7 servings.
We are definitely not omitting the wine. And anything with spoonfuls of ice cream is good too, right? The grocery store didn’t have black raspberry Jell-O, and actually I could only find Raspberry in Kroger brand, so that’s what I went with. The ice cream gave it a good creamy flavor and almost a mousse texture, and it looked super awesome in my champagne glasses. Three Jell-Os to this one!
